Zucchini Lemon Mint Salad
Ingredients
- 1 sliced zucchini
- 1 whole lemon
- Parmesan or Grana Padano cheese, sliced thickly
- Fresh mint
- Lemon zest
- Salt and pepper, to taste
- Extra virgin olive oil
Preparation
Cut the zucchini into thin slices, thicker than carpaccio.
Transfer the slices to a large plate.
Salt and pepper to taste.
Squeeze the entire lemon over the slices.
Sprinkle powdered parmesan over the slices, covering as much as possible.
Grate thick pieces of hard parmesan over it.
Add extra virgin olive oil.
Finish with lemon zest.
Notes
Zucchini can be eaten raw and tastes better this way.
A good dressing is essential for this salad.
This salad was a success at home.
