Griddled Zucchini Orange and Burrata Salad

Ingredients

Salad

  • 2 medium courgettes (zucchini), sliced 1.5-2cm thick on the angle
  • 1 tbsp olive oil
  • 2 large oranges, 1 segmented, 1 sliced in half and juiced for the dressing
  • Handful lamb’s lettuce
  • 1 burrata (Julienne Bruno Burella is a really good vegan alternative)

Orange chilli dressing

  • 3 tbsp extra virgin olive oil
  • 2 tbsp coconut or apple cider vinegar
  • 1 tbsp chilli crisp
  • 2 tbsp sunflower seeds, toasted
  • Salt and pepper

Preparation

Griddle courgettes

  1. Heat a griddle pan over medium-high heat for 5 minutes until evenly hot.

  2. Combine the courgettes and olive oil in a bowl and season with a large pinch of salt and pepper.

  3. Cook the courgettes for 3 minutes on each side until well charred, then remove.

  4. Do this in batches if necessary.

  5. You can also use a barbecue for this.

Make dressing

  1. Combine the olive oil, orange juice, coconut or apple cider vinegar, chilli crisp, sunflower seeds, salt and pepper in a bowl and whisk to combine.

Assemble salad

  1. Plate the courgettes, orange segments, lamb's lettuce, and burrata.

  2. Generously drizzle over the orange chilli dressing and enjoy as a lunch, dinner, or barbecue side.

Notes

  1. Serves 2-4 as a side. For a vegan version, use Julienne Bruno Burella burrata alternative.
