Vegan BBQ Jackfruit Grilled Cheese Sandwich

Ingredients

  • 1 can young jackfruit, drained and patted dry
  • 3 tbsp avocado oil
  • 1/2 tsp paprika
  • 1 tsp onion powder
  • 1/2 salt
  • 4 tbsp good quality BBQ sauce
  • 2 cups spinach blanched
  • 4 slices multi grain bread or whole wheat bread
  • 8 slices daiyafoods cheese
  • 1 tbsp earthbalance buttery spread

Preparation

  1. Drain and pat dry the jackfruit, then mix with avocado oil, paprika, onion powder, salt, and BBQ sauce. Cook in a pan over medium heat until tender and slightly caramelized

  2. Blanch the spinach by boiling briefly and then cooling in ice water to retain color and texture

  3. Assemble the sandwich by layering cheese slices, the prepared jackfruit mixture, blanched spinach, and additional cheese between two slices of bread

  4. Spread the buttery spread on the outer sides of the bread and grill in a pan or on a griddle over medium heat until the bread is golden brown and the cheese is melted
