Vegan No Bake Blueberry Bars

Ingredients

Bottom

  • 100 grams of oat flour
  • 100 grams of coconut flour (or almond flour)
  • 3 tbsp. maple syrup
  • 50 grams of melted coconut oil

Blueberry filling

  • 150 grams of raw nuts
  • 150 grams of (frozen) blueberries
  • 3 tbsp. lemon juice
  • 50 grams of melted coconut oil
  • 5 tbsp. maple syrup

Preparation

  1. Mix all bottom ingredients together until combined

  2. Press the mixture firmly into a lined pan or dish

  3. Blend blueberry filling ingredients until smooth

  4. Spread the filling evenly over the bottom layer

  5. Refrigerate for at least 2 hours to set

  6. Cut into bars and serve
