Vegan No Bake Blueberry Bars
Ingredients
Bottom
- 100 grams of oat flour
- 100 grams of coconut flour (or almond flour)
- 3 tbsp. maple syrup
- 50 grams of melted coconut oil
Blueberry filling
- 150 grams of raw nuts
- 150 grams of (frozen) blueberries
- 3 tbsp. lemon juice
- 50 grams of melted coconut oil
- 5 tbsp. maple syrup
Preparation
Mix all bottom ingredients together until combined
Press the mixture firmly into a lined pan or dish
Blend blueberry filling ingredients until smooth
Spread the filling evenly over the bottom layer
Refrigerate for at least 2 hours to set
Cut into bars and serve
