Sweet Potato Boat with Avocado and Egg

Ingredients

  • 1 sweet potato
  • 1/2 avocado
  • 1 egg

Preparation

  1. Poke the sweet potato with a fork and microwave it for 3 minutes.

  2. Poach the egg: Bring a pot of water to a gentle simmer, add a splash of vinegar, carefully crack the egg into the water, and cook for 3-4 minutes until the white is set but the yolk is still runny.

  3. Top the microwaved sweet potato with half an avocado, either mashed or sliced, and the poached egg.
