Caramel Magnum Ice Cream

Ingredients

  • 1 can full fat coconut milk
  • 1/2 cup cashews
  • 3 tbsp maple syrup or any natural sweetener
  • 1/2 tsp vanilla paste
  • pinch salt
  • ingredients for caramel layer??
  • 1/2 cup tahini
  • 2 tbsp date molasses or any natural liquid sweetener
  • pinch of salt
  • ingredients for chocolate layer??
  • 200 gm dark chocolate

Preparation

  1. Set the can of coconut milk in fridge for 8 hours or overnight, so you will have the solid coconut cream ( about 1/2 cup) & place it in the blender with the rest ingredients of ice cream & blend until smooth then put it into ice cream moulds fill them up 3/4 of the way & set the moulds in freezer

  2. To prepare caramel layer; mix all ingredients together , once the ice cream has set , take the moulds of ice cream out of the freezer & spread the caramel layer into the remaining 1/4 of the moulds & return the moulds to the freezer

  3. To prepare chocolate layer; melt the chocolate then dip the magnum in melted chocolate & set on baking paper& freeze
