Vegan Vanilla-Poppy Seed Mug Cake
Ingredients
- 3 tbsp spelt flour
- 1 tbsp vanilla protein powder (optional)
- 2 tbsp sugar (date sugar)
- 2 tbsp poppy seed
- vanilla extract
- 1/2 tsp baking powder
- 1/8 tsp baking soda
- a pinch of salt
- 4 tbsp plant milk
- 2 tbsp apple sauce
Toppings
- Blueberries or raspberries
Preparation
In a microwave-safe mug, combine all dry ingredients and mix well.
Add wet ingredients and stir until smooth.
Microwave on high for 2 minutes or until the cake is set.
Top with blueberries or raspberries and serve.
