Vegan Vanilla-Poppy Seed Mug Cake

Ingredients

  • 3 tbsp spelt flour
  • 1 tbsp vanilla protein powder (optional)
  • 2 tbsp sugar (date sugar)
  • 2 tbsp poppy seed
  • vanilla extract
  • 1/2 tsp baking powder
  • 1/8 tsp baking soda
  • a pinch of salt
  • 4 tbsp plant milk
  • 2 tbsp apple sauce

Toppings

  • Blueberries or raspberries

Preparation

  1. In a microwave-safe mug, combine all dry ingredients and mix well.

  2. Add wet ingredients and stir until smooth.

  3. Microwave on high for 2 minutes or until the cake is set.

  4. Top with blueberries or raspberries and serve.
