Sweet and Spicy Seitan

Ingredients

Wet

  • 1 cup (190g) canned chickpeas
  • 1/2 cup (125ml) vegetable stock
  • 1 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder

Dry

  • 1 cup (130g) vital wheat gluten
  • 2/3 cup (75g) chickpea flour
  • 2 tablespoons vegan Worcestershire sauce

Glaze

  • 6 tablespoons soy sauce
  • 1 tablespoon sriracha
  • zest of 1/2 lime
  • 3 tablespoons maple syrup or agave

Preparation

  1. Blend the wet ingredients first.

  2. Add the dry ingredients and blend for 2-3 minutes.

  3. Shape a dough ball.

  4. Make 5 pieces and shape them.

  5. Simmer in vegetable stock for 15 minutes.

  6. Fry the fillets in oil and add the glaze.

  7. Stir on medium heat until the sauce is reduced.

Serving suggestions

  1. Serve with rice and some spring onions.

  1. Seitan is high in protein and can be used as a mock chicken substitute.
