Roasted Tomato Soup

Ingredients

  • 1 kg tomatoes
  • 1 yellow onion, chopped
  • 3 garlic cloves, crushed
  • 3 tablespoons balsamic vinegar
  • 3 cups of water
  • 1 tablespoon dried rosemary
  • 1 tablespoon olive oil
  • One cube vegetable stock (optional)
  • Salt and pepper

Preparation

  1. Mix all ingredients except vinegar, vegetable stock, and water in a baking pan.

  2. Bake at 200°C for 30 minutes. Then turn on the broiler from the top and bake for 10 minutes or until the tomatoes start to char slightly.

  3. Place everything in a pot and add the remaining ingredients.

  4. Blend everything using a stick blender.

  5. Bring the mixture to a boil, then simmer for 10 minutes.

  6. Serve with grilled cheese crackers and enjoy.

  7. Each serving has 82 calories (recipe serves 4).
