Roasted Tomato Soup
Ingredients
- 1 kg tomatoes
- 1 yellow onion, chopped
- 3 garlic cloves, crushed
- 3 tablespoons balsamic vinegar
- 3 cups of water
- 1 tablespoon dried rosemary
- 1 tablespoon olive oil
- One cube vegetable stock (optional)
- Salt and pepper
Preparation
Mix all ingredients except vinegar, vegetable stock, and water in a baking pan.
Bake at 200°C for 30 minutes. Then turn on the broiler from the top and bake for 10 minutes or until the tomatoes start to char slightly.
Place everything in a pot and add the remaining ingredients.
Blend everything using a stick blender.
Bring the mixture to a boil, then simmer for 10 minutes.
Serve with grilled cheese crackers and enjoy.
