Cucumber Mint Lime Popsicles with Ginger Kick

Ingredients

  • 1 Telegraph cucumber, peeled and chopped
  • 1/4 cup mint leaves (no stems)
  • 1/2 tsp ginger powder
  • 1.5 cups water
  • 1/4 cup maple syrup
  • Juice of 2 limes

Preparation

  1. Combine water, maple syrup, and ginger powder in a saucepan on low-medium heat until mixed, then remove from heat and let cool.

  2. In a blender, add cucumber, lime juice, mint leaves, and the cooled syrup, then puree until smooth. Optionally strain through a sieve for smoother texture, but keeping it unstrained provides more fiber.

  3. Pour the mixture into popsicle molds and freeze until set.

  4. Optionally, add sparkling water, gin, or vodka to the mixture before freezing for variations suitable for the summer season.
