Raw Carrot Cake Protein Balls
Ingredients
- 1 medium carrot, rough chopped
- 2 cups unsweetened toasted coconut flakes
- 2 cups oats (old fashioned or gf)
- 1/2 cup natural smooth peanut butter
- 1/2 cup maple syrup
- 1/2 tsp vanilla
- 1 tsp cinnamon
- 1/2 tsp ground ginger
- 1/4 cup rough chopped pecan
Preparation
Add carrot pieces to food processor and pulse a few times until they are chopped but not pureed
Transfer carrots to a bowl
Add toasted coconut flakes and oats to food processor and pulse until it is coursely ground but not flour
Add all ingredients, including carrot, to food processor and pulse until the mixture is combined and forms a ball (about 8-10 pulses)
Scoop out 1 Tbl of mixture per ball, roll, and set on parchment or wax paper
I rolled mine in dessicated coconut but you don't need to or you could roll in ground toasted coconut flakes
