Carrot Chia Overnight Oats

Ingredients

  • 1/2 cup oats
  • 3/4 cup plant milk
  • 2 tablespoons grated carrot
  • 1 teaspoon cinnamon
  • 1/2 teaspoon vanilla
  • 2 tablespoons chia seeds

Optional additions

  • coconut yogurt
  • granola
  • shaved carrot
  • 1 teaspoon maple syrup

Preparation

  1. Place oats, chia seeds, and milk in a large measuring cup and stir until well combined.

  2. Add the remaining ingredients and stir.

  3. Transfer the mixture to an airtight jar and place in the fridge overnight.

Serving suggestions

  1. Top with coconut yogurt, granola, and shaved carrot if desired.

  2. Add maple syrup for sweetness if preferred.
