Carrot Cake Overnight Oats
Ingredients
- 1/2 cup gluten-free oats
- 1 tablespoon chia seeds or ground flax seeds
- 2 tablespoons grated carrots
- 1 teaspoon vanilla
- 1-2 tablespoons maple syrup (optional)
- 1 handful raisins
- 1 teaspoon pumpkin spice and a pinch of salt
- 1 cup cashew milk
Toppings
- Caramelized banana
- Grated carrots
- Almond butter
- Hemp seeds
- Cinnamon
Preparation
Combine all the soak overnight ingredients in a container and refrigerate overnight.
In the morning, heat the mixture or eat it cold as desired.
Add the toppings before serving.
