Carrot Cake Energy Balls

Ingredients

  • 1 medium carrot, grated
  • 1/2 cup + 1tbsp rolled oats
  • 1/4 cup almond butter
  • 1 tsp ground ginger + cinnamon
  • 1 tbsp ground flaxseed
  • 2 tsp chia seeds
  • 2 tbsp maple syrup

Preparation

  1. Add all these ingredients to a mixing bowl and bind together

  2. Add more oats if the mixture is too wet depending on how much moisture is there from the carrot

  3. Form in to balls and top with desiccated coconut + seeds
