Spinach and Orange Salad with Super Seed Sprinkles

Ingredients

  • 2 handfuls organic spinach
  • 2 tbsp balsamic or apple cider vinegar
  • 1 tbsp extra virgin olive oil
  • 1 large navel orange
  • 1 tbsp sundried cranberries or raisins
  • 1-2 tbsp Super Seed Sprinkles
  • Squeeze of lemon juice
  • Pinch of Himalayan sea salt and pepper (optional)

Optional

  • 1-2 tbsp lightly toasted coconut flakes

Preparation

  1. Tear the spinach into bite-sized pieces.

  2. Peel and slice the orange into thin rounds.

  3. In a bowl, combine the spinach, orange slices, sundried cranberries or raisins, and super seed sprinkles.

  4. Drizzle with balsamic or apple cider vinegar and extra virgin olive oil.

  5. Add a squeeze of lemon juice.

  6. Season with a pinch of Himalayan sea salt and pepper, if desired.

  7. Optionally, add lightly toasted coconut flakes and toss to combine.
