Vegan Sushi Style Rice Burger

Ingredients

  • 3 cups cooked sushi rice
  • 2 tablespoons rice vinegar
  • 1 tablespoon mirin
  • a pinch of salt (optional)
  • 1 package FieldBurger, thawed to room temperature
  • Furikake seasoning or cut nori sheets (optional)

Filling

  • kale leaves
  • avocado slices
  • julienned purple cabbage

Condiment

  • yellow mustard
  • maple syrup

Preparation

  1. Season cooked rice with mirin and rice vinegar, then let it cool down.

  2. Place about 1/3 cup of rice into a wrapped 2-inch diameter round bowl with a flat bottom.

  3. Press the rice tightly using a spoon or spatula.

  4. Alternatively, use a glass bowl or sushi presser to shape the rice.

  5. In a heated non-stick pan with a drizzle of oil, sear the rice bun until golden brown on both sides.

  6. Set aside until ready to use.

  7. Using the same pan, add a little more oil, then sear the thawed FieldBurger for about 2 to 3 minutes on each side until slightly crispy.

  8. Place one rice bun on a plate.

  9. Layer with a kale leaf, a handful of julienned purple cabbage, the FieldBurger, and a few avocado slices.

  10. Add a tiny spoonful of maple mustard.

  11. Top with another rice bun.

  12. Finish with a sprinkle of Furikake seasoning.

  13. Serve.
