Creamy Cherry Tomato and Tofu Pasta
Ingredients
- 300g spelt pasta
- 500g cherry tomatoes
- 2 banana shallots
- 3 cloves garlic
- 1 tbsp olive oil
- 308g silken tofu
- Ladle of pasta water
- Salt and pepper
- 1 tsp chilli flakes
Garnishes
- Basil
- Drizzle of olive oil
- Feta cheese
Preparation
Roast cherry tomatoes, shallots and garlic with olive oil, salt and pepper until soft and caramelised.
Cook pasta until al dente, reserving a ladle of cooking water.
Blend roasted vegetables with silken tofu, pasta water and a pinch of chilli until smooth and creamy.
Toss pasta through the sauce and finish with basil, olive oil and crumbled feta.
