Creamy Cherry Tomato and Tofu Pasta

Ingredients

  • 300g spelt pasta
  • 500g cherry tomatoes
  • 2 banana shallots
  • 3 cloves garlic
  • 1 tbsp olive oil
  • 308g silken tofu
  • Ladle of pasta water
  • Salt and pepper
  • 1 tsp chilli flakes

Garnishes

  • Basil
  • Drizzle of olive oil
  • Feta cheese

Preparation

  1. Roast cherry tomatoes, shallots and garlic with olive oil, salt and pepper until soft and caramelised.

  2. Cook pasta until al dente, reserving a ladle of cooking water.

  3. Blend roasted vegetables with silken tofu, pasta water and a pinch of chilli until smooth and creamy.

  4. Toss pasta through the sauce and finish with basil, olive oil and crumbled feta.

Notes

  1. This recipe is a weeknight winner with minimal effort and takes under 30 minutes.
