Cheesy Penne with Cherry Tomatoes, Spinach, and Broccoli

Ingredients

  • chickpea penne
  • cherry tomatoes
  • spinach
  • onions
  • broccoli
  • plant-based ricotta
  • olive oil
  • minced garlic
  • salt and pepper

Preparation

  1. Steam cherry tomatoes, onion, and spinach in a pan with a splash of water until tender, then add olive oil and minced garlic and sauté.

  2. Cook the pasta according to package instructions, then drain and reserve about one-third to one-half cup of the pasta water.

  3. Add the cooked penne to the pan with the other ingredients and lower the heat to a simmer.

  4. Add the plant-based ricotta and a little bit of the reserved water at a time until the desired consistency is reached, then drizzle with olive oil and add salt and pepper.
