Easy Crispy and Tangy Apple Slaw

Ingredients

  • 1 cup shredded red cabbage
  • 1 cup shredded white cabbage
  • 1 cup grated apple
  • 1 cup grated carrot
  • 1/4 cup finely chopped flat leaf parsley

Dressing

  • 1/3 cup coconut yogurt
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 2 teaspoons maple syrup
  • pinch sea salt
  • 1/4 cup pumpkin seeds

Preparation

  1. Toast the pumpkin seeds in a dry skillet over medium heat until golden and fragrant.

  2. In a large bowl, combine the shredded cabbage, grated apple, grated carrot, and chopped parsley.

  3. In a small bowl, whisk together the coconut yogurt, apple cider vinegar, Dijon mustard, maple syrup, and sea salt to make the dressing.

  4. Pour the dressing over the slaw mixture and toss until evenly coated.

  5. Sprinkle the toasted pumpkin seeds over the slaw and serve.

Notes

  1. This slaw is a great side dish to serve with warm root vegetables or a fall barbecue.
