Pumpkin Love with Pumpkin Chickpea Blondies

Ingredients

  • - 2 cups of chickpeas
  • - 1/2 cup of pureed pumpkin
  • - 1/2 cup of nut butter
  • - 1/2 cup of maple syrup
  • - 1/3 cup of oats
  • - 2 tsp of pumpkin pie spice
  • - 1 tsp of baking powder
  • Chocolate drizzle
  • - melted chocolate

Preparation

  1. Mix all blondie ingredients in a food processor

  2. Spoon into a parchment paper lined 8×8 bakeware dish, spread out evenly

  3. Bake at 350° for 35mins or until the edges begin to brown

  4. Allow to cool completely, drizzle with chocolate & cut into squares
