Carrot Cake Blondies

Ingredients

  • 1/3 cup creamy almond butter
  • 2 tbsp coconut oil
  • 1/4 cup unsweetened dairy free milk
  • 1/4 cup maple syrup
  • 1/2 cup shredded carrots
  • 1 1/3 cup quinoa flour
  • squeeze of 1/2 lemon
  • handful raisins
  • 1/2 tsp baking powder
  • optional : superfoods like lucuma, maca, ashwaghanda

Preparation

  1. Mix almond butter, maple, oil, milk, and flax eggs in a large bowl. Stir in shredded carrots. Add and carefully mix quinoa flour and spices (and optional superfoods). Finally fold in raisins, lemon, and baking powder. Batter should be sticky! pour into a lightly oiled baking dish (8x8). Bake at 350 for 25 minutes

  2. For cashew cream frosting: 2/3 cup cashews, soaked for 30 minutes at least, 3 tbsp dairy free milk, 2 tbsp maple or coconut sugar.

  3. While cake is baking, blend frosting ingredients in high power blender, like vitamix, or a food processor until creamy. Allow cake to cook before spreading frosting. Enjoy
