Easy Maple Syrup Cake

Ingredients

  • 200g self raising flour (i use gluten free)
  • 50g coconut flour (if you can’t get any use 50g of self raising flour)
  • 100g margarine (i use dairy free)
  • 100g coconut oil (again if you can’t get any use 100g of margarine)
  • 175ml maple syrup ? 4 large eggs (or flax eggs/ egg replacer or apple cider vinegar mixed with soya milk if vegan)
  • 1 tbsp baking powder ?1 tbsp lemon juice
  • 1 tsp vanilla bean paste/ extract

Preparation

  1. Sift flour and add all other ingredients into a bowl

  2. Mix until smooth

  3. Bake in the oven on 180 degrees celsius/ 350 degrees fahrenheit/ gas mark 4 for 30 minutes (or until skewer prod comes out clean)

  4. This recipe makes two 8 inch tins or 1 large traybake tin
