My Beautiful Bunny Burrow
Ingredients
- 60 g coconut oil (melted)
- 60 ml orange juice
- 150 ml unsweetened almond milk
- 2 tbsp orange zest
- 1 tsp vanilla extract
- 8 tbsp maple syrup
- 150 g ground almonds
- 150 g GF flour
- 2 tsp baking powder
- 1/4 tsp baking soda
Preparation
Preheat oven to 180 ºC.
Combine your wet ingredients in a mixing bowl.
Chuck heaps of ground almonds into the batter.
Sift the dry ingredients before adding them into the batter.
Whisk the batter and add a few drops of milk if it looks dry.
Pour the mixture into a bunny-shaped pan.
Bake for 25 mins (or till the toothpick comes out clean).
