Grilled Watermelon and Feta Skewers with Pesto
Ingredients
For skewers
- 400 g watermelon, peeled and cut into triangles
- 200 g feta, cut into cubes
- 80 g breakfast bacon or bacon, cut into strips
- 16 pitted green mixed olives
- 8 dried tomatoes in oil
For pesto
- Remaining dried tomatoes with oil from the jar
- A handful of olives
- 60 g almonds
- 60 g feta
- Fresh mint to taste for decoration
Preparation
Wrap bacon around each feta cube.
Alternately thread watermelon, olive, bacon-wrapped feta, olive, and watermelon onto skewers.
Grill the skewers on a grill pan.
While grilling, drizzle the dried tomatoes with olive oil over the skewers for aroma.
Puree the remaining dried tomatoes with oil, olives, almonds, and feta to make the pesto.
Serve with the warm skewers and decorate with mint leaves.
