Baked Oats Cake for Breakfast or Dessert
Ingredients
- 120g rolled porridge oats
- 250g low-fat plain or vanilla yogurt (soya used)
- Splash of vanilla essence
- 3 eggs (vegan version available)
- 4 tbsp extra yogurt (for serving)
- Choice of fruit (for serving)
Preparation
Pre-heat oven to 200°C/400°F/gas 6.
In a large bowl, mix oats, yogurt, vanilla essence, and eggs until combined.
Line an 8-inch cake tin with baking paper, pour the mixture into it, and bake for 30 minutes.
Serve with extra yogurt and fruit.
