Baked Oats Cake for Breakfast or Dessert

Ingredients

  • 120g rolled porridge oats
  • 250g low-fat plain or vanilla yogurt (soya used)
  • Splash of vanilla essence
  • 3 eggs (vegan version available)
  • 4 tbsp extra yogurt (for serving)
  • Choice of fruit (for serving)

Preparation

  1. Pre-heat oven to 200°C/400°F/gas 6.

  2. In a large bowl, mix oats, yogurt, vanilla essence, and eggs until combined.

  3. Line an 8-inch cake tin with baking paper, pour the mixture into it, and bake for 30 minutes.

  4. Serve with extra yogurt and fruit.
