Creamy Blueberry and Spinach Smoothie with Kick

Ingredients

  • 1 small handful of sunflower seeds
  • Juice of 1 lemon
  • 1 cup of frozen blueberries
  • 2 tablespoons of coconut yoghurt
  • 1 teaspoon of coconut oil
  • 1 handful of spinach (fresh or frozen)
  • 1 small chunk of fresh ginger
  • 1 teaspoon of Lucuma powder
  • 1/4 teaspoon of cayenne pepper
  • Coconut milk (to cover)

Preparation

  1. Cover the ingredients with coconut milk and blitz until smooth.

  2. Note: This smoothie is beneficial for gut health and helps balance blood sugars.
