Butterfly Pea Powder Dalgona Coffee with Aquafaba
Ingredients
- 2 tablespoons sugar
- 2 tablespoons boiling water
- Liquid from a can of chickpeas (aquafaba)
- 1 teaspoon butterfly pea powder
- 1 cup oat milk
Preparation
Strain can of chickpeas into a bowl to use the liquid from the can. Use a handheld mixer to whip them until fluffy.
Meanwhile boil water and pour two tablespoons in a bowl with sugar and butterfly pea powder to dissolve.
Once the aquafaba is frothy, add in the blue bowl of sugary goodness.
Fill two mini small jars with oat milk and ice and spoon the frothy blue on top.
You can also make this with an egg white if you don’t have chickpeas. Garnish with some edible flowers.
