Creamy Pumpkin Spice Oatmeal with Caramelized Bananas and Chocolate
Ingredients
- 1/2 cup gluten-free oats
- 1 tbsp ground chia seeds (optional)
- 1/4 cup pumpkin puree
- 1 scoop protein powder of choice
- 1 tsp pumpkin spice
- Pinch of salt
- 1 cup milk of choice
Preparation
In a pot, combine 1/2 cup of gluten-free oats, 1 tbsp of ground chia seeds (if using), 1/4 cup of pumpkin puree, 1 scoop of protein powder, 1 tsp of pumpkin spice, and a pinch of salt.
Pour in 1 cup of milk of your choice (dairy or non-dairy).
Place the pot on the stove and bring the mixture to a boil over medium heat.
Once it starts boiling, reduce the heat to low and stir the mixture continuously until it thickens to your desired consistency.
While the oatmeal is cooking, prepare the toppings
Slice bananas and caramelize them by searing them in coconut oil on one side.
Gather peanut butter and chocolate chips for topping.
Once the oatmeal is thickened, remove it from the heat.
Serve the creamy pumpkin spice oatmeal in bowls.
Top each bowl with the caramelized bananas, a drizzle of peanut butter, and a sprinkle of chocolate chips.
