Delicious Pumpkin Pie Pancakes
Ingredients
- 1/2 cup flour

- 1/3 cup pumpkin puree
- 1/2 cup almond milk + 1 tsp apple cider vinegar
- 1/2 tsp cinnamon
- 1/4 tsp ginger
- 1 tsp baking powder

Preparation
Mix dry ingredients together in a bowl: flour, protein powder, cinnamon, ginger, and baking powder.
In a separate bowl, combine wet ingredients: pumpkin puree and almond milk mixture with apple cider vinegar.
Gently combine wet and dry mixtures to form a batter, avoiding overmixing.
Heat a non-stick skillet or griddle over medium heat and lightly grease if necessary.
Pour batter onto the skillet to form pancakes and cook until bubbles appear on the surface, then flip and cook until golden brown on both sides.
Serve pancakes with desired toppings.
