Delicious Sunny-Side Up Waffles for Easter Breakfast

Ingredients

  • 100g butter
  • 3 tablespoons erythritol or xylitol
  • 3 eggs
  • 200g whole grain spelt flour
  • 80ml almond milk
  • 1/2 teaspoon baking powder

Topping

  • 200g Greek yogurt
  • 3 tablespoons erythritol or xylitol
  • 5 canned peach halves

Preparation

  1. Mix butter and sugar alternative well.

  2. Add eggs and stir in.

  3. Alternately stir in flour and almond milk into the dough.

  4. Bake the waffles in a greased waffle iron.

  5. Mix the yogurt with the sugar alternative and place a large dollop as 'egg white' on the waffles. Distribute nicely in a round shape.

  6. Place a peach half in the center of the waffle.
