Delicious Sunny-Side Up Waffles for Easter Breakfast
Ingredients
- 100g butter
- 3 tablespoons erythritol or xylitol
- 3 eggs
- 200g whole grain spelt flour
- 80ml almond milk
- 1/2 teaspoon baking powder
Topping
- 200g Greek yogurt
- 3 tablespoons erythritol or xylitol
- 5 canned peach halves
Preparation
Mix butter and sugar alternative well.
Add eggs and stir in.
Alternately stir in flour and almond milk into the dough.
Bake the waffles in a greased waffle iron.
Mix the yogurt with the sugar alternative and place a large dollop as 'egg white' on the waffles. Distribute nicely in a round shape.
Place a peach half in the center of the waffle.
