Delicious Vegan Stuffed Cookies Variations

Ingredients

  • 80g coconut blossom sugar or similar
  • 80g plant-based margarine or heatable oil
  • A pinch of salt
  • 100 ml plant milk of choice
  • 225g flour (spelt type 630 recommended; use gluten-free mix for GF version)
  • 25g protein powder (optional; can substitute with more flour)
  • A few vegan chocolate drops and chocolate

Preparation

  1. Knead all ingredients except the chocolate into a dough.

  2. Preheat the oven to 180°C/350°F with top and bottom heat.

  3. Form small or larger cookies.

  4. Optionally, insert a piece of chocolate, cookie, or marshmallow in the center.

  5. Bake for approximately 12 minutes and enjoy best when lukewarm.

  6. For the chocolate variant: Mix in 40g cocoa powder, omit protein powder, and adjust flour as needed.
