Fluffy Cinnamon Buns

Ingredients

  • 130g soy quark (soyyogurt should work as well)
  • 24g fresh yeas
  • 30g vegan margarine (room temperature)
  • 60g cane sugar (or coconut sugar)
  • use more if you like them sweet
  • 50ml warm water
  • 300g flour ( I used spelt, Type 630)
  • a pinch of salt
  • optional: flavedrops

Preparation

  1. Mix soy quark with the water and sugar

  2. Add dry yeast, stir and let it rest for 2 min

  3. Mix flour and salt and add the yeast mixture and margarine

  4. Knead to a dough

  5. Let it rest for 30-60 min (in a warm place, not over 40°C)

  6. Preheat the oven to 180°C (350°F) upper and lower heat

  7. Knead the dough again (~5 min) and roll the dough out (~24×27cm)

  8. Filling: •4 tbsp sugar/coconut blossum sugar/xylit • 1 tsp cinnamon ➡️ spread it over the dough, roll it up, cut into 6 slices and bake them for ~20 min

  9. They taste the best when they are still a little warm ? I've added some coconut blossun syrup on top
