Fluffy Cinnamon Buns
Ingredients
- 130g soy quark (soyyogurt should work as well)
- 24g fresh yeas
- 30g vegan margarine (room temperature)
- 60g cane sugar (or coconut sugar)
- use more if you like them sweet
- 50ml warm water
- 300g flour ( I used spelt, Type 630)
- a pinch of salt
- optional: flavedrops
Preparation
Mix soy quark with the water and sugar
Add dry yeast, stir and let it rest for 2 min
Mix flour and salt and add the yeast mixture and margarine
Knead to a dough
Let it rest for 30-60 min (in a warm place, not over 40°C)
Preheat the oven to 180°C (350°F) upper and lower heat
Knead the dough again (~5 min) and roll the dough out (~24×27cm)
Filling: •4 tbsp sugar/coconut blossum sugar/xylit • 1 tsp cinnamon ➡️ spread it over the dough, roll it up, cut into 6 slices and bake them for ~20 min
They taste the best when they are still a little warm ? I've added some coconut blossun syrup on top
