Delicious Stuffed Cookies with Chocolate Variation

Ingredients

  • 80g coconut blossom sugar or similar
  • 80g plant-based margarine or heatable oil
  • A pinch of salt
  • 100 ml plant milk of choice
  • 225g flour (spelt type 630 or gluten-free mix)
  • 25g protein powder (optional, or use more flour)
  • A few vegan chocolate drops and chocolate

Preparation

  1. Knead all ingredients except chocolate into a dough.

  2. Preheat oven to 180°C or 350°F with top and bottom heat.

  3. Form cookies of desired size.

  4. Optionally, place a piece of chocolate in the center.

  5. Bake for about 12 minutes and enjoy while warm.

Variations

  1. For chocolate version, mix in 40g cocoa and omit or reduce protein powder.
