Green Smoothie with Blueberry and Ginger Compote
Ingredients
Green smoothie
- 2 handfuls fresh greens (spinach, kale, rocket or beet greens)
- 1/2 cucumber
- 1/4 avocado
- 1/4 cup coconut yoghurt
- 2 tsp spirulina or chlorella
- 1/2 banana
- Juice of half a lemon
- Optional: collagen powder, hemp seeds, cordyceps, cinnamon.
Blueberry compote
- 1 cup frozen blueberries
- 1 tsp grated ginger
- A splash of water
Preparation
Add all ingredients to a high-powered blender and blend until smooth.
Compote method
Put all the ingredients in a saucepan and simmer slowly for 10 minutes, stirring often.
Layer the blueberry compote and green smoothie into 2 glasses. Enjoy!
