Green Smoothie with Blueberry and Ginger Compote

Ingredients

Green smoothie

  • 2 handfuls fresh greens (spinach, kale, rocket or beet greens)
  • 1/2 cucumber
  • 1/4 avocado
  • 1/4 cup coconut yoghurt
  • 2 tsp spirulina or chlorella
  • 1/2 banana
  • Juice of half a lemon
  • Optional: collagen powder, hemp seeds, cordyceps, cinnamon.

Blueberry compote

  • 1 cup frozen blueberries
  • 1 tsp grated ginger
  • A splash of water

Preparation

  1. Add all ingredients to a high-powered blender and blend until smooth.

Compote method

  1. Put all the ingredients in a saucepan and simmer slowly for 10 minutes, stirring often.

  2. Layer the blueberry compote and green smoothie into 2 glasses. Enjoy!
