Healthy Gluten-Free Banana Waffles

Ingredients

  • 1/2 cup simple mills waffle mix
  • 1/4 cup cassava flour
  • 2 eggs (VEGAN sub for flax eggs)
  • 2 tbsp coconut oil
  • 1/4 cup nut milk
  • 1 ripe banana
  • 1/2 tsp baking soda

Toppings

  • Berries
  • Nut butter
  • Purely elizabeth granola
  • Mint

Preparation

  1. Mash the ripe banana.

  2. Mix all dry ingredients together

  3. Mix all wet ingredients together

  4. Combine the dry and wet mixtures to form batter

  5. Cook the batter in a waffle iron until golden brown
