Homemade Granola with Mixed Nuts and Berries
Ingredients
- 1 cup oats
- 1 cup corn flakes-style cereal
- 1/4 cup mixed seeds
- A handful of almonds
- A handful of goji berries
- Shredded coconut, to taste
- 1 tbsp coconut oil
- 1 tbsp peanut butter
- 2 tbsp baking stevia or brown/coconut sugar
Preparation
In a bowl, mix the oats, mixed seeds, and corn flakes-style cereal. Remove the skins from the almonds to prevent burning during baking. Add whole or chopped almonds to the mixture and combine well.
In a separate bowl, melt the coconut oil and mix it with the peanut butter. This mixture will act like a syrup that coats the granola evenly and prevents clumping. Once well mixed, transfer the contents of the bowl to a baking tray.
Bake in a preheated oven at 170°C (340°F) for 20 minutes. Every 5 minutes, stir and flatten the granola on the tray to ensure even browning. In the final 3 minutes, increase the temperature to 180°C (356°F) for a golden color.
Remove the baking tray from the oven and let it cool slightly. Add the goji berries and shredded coconut to the granola. Optional: add cinnamon or extra syrup for flavor. Transfer to a glass jar or airtight container for storage.
