Homemade Hibiscus and Grapefruit Tart
Ingredients
Crust
- 1 cup GF oat flour
- 3/4 cup almond meal
- 4 tbsp organic coconut oil
- 1 tbsp pure maple syrup
- Pinch of cacao powder
- Pinch of salt
Filling
- 1 cup fresh strawberries
- 1 cup grapefruit juice
- 1 1/4 cup full fat coconut cream
- 1/3 cup pure maple syrup
- 1 tsp hibiscus flower powder
- 2 tsp agar-agar powder
Preparation
Preheat oven to 180ºC.
Grease your tart tin.
Combine the dry ingredients in a food processor to make the crust.
Add the wet ingredients and pulse until you get a moist moldable mixture.
Assemble the crust by firmly pressing the mixture into the bottom and on the sides of your tart tin.
Bake till it turns golden brown. (15 mins)
Let it cool on a wire rack while you make the filling.
Chuck the strawberries in the blender to make a puree. Add the grapefruit juice and blend.
Strain the juice through a mesh sieve and pour it into a saucepan.
Boil the juice and coconut cream before adding the rest of the ingredients.
Keep stirring till the agar powder dissolves.
Let the mixture boil (approx 30 secs).
Then strain it through a mesh sieve.
Cool it for 10 mins before adding it to the tart.
Refrigerate for a few hours.
