Lemon Bars

Ingredients

  • 1 1/3 cup coconut flour
  • 1/2 cup melted coconut oil
  • 1/4 cup lemon juice
  • 2 tbsp monk fruit (keto diet) or coconut sugar (paleo diet)
  • 1/4 cup monk fruit syrup (keto diet) or maple syrup (paleo diet)

Preparation

  1. For the BASE: mix all ingredients in a bowl until they can be held together. ✍?Pour the dough in a baking sheet with parchment paper. Press the dough until you cover the dish. Leave in the refrigerator until the layer is ready

  2. Lemon layer: 1 cup coconut macadamia cashew butter; 2 tbsp cacao butter; 1 cup lemon juice, 1/4 cup sweetener of choice; 2 tsp psyllium husk (optional but it gives the firm consistency or you can add 1 tbsp of coconut oil); lemon zest; pinch sea salt.

  3. Blend all ingredients until very smooth! Pour on top of the base. Top with some lemon zest.

  4. Leave in the refrigerator until set. Then cut it into bars! Enjoy
