Peanut Butter Berry Panna Cotta Slice

Ingredients

Base

  • 6x Protein Balls (@purabon peanut butter)

Peanut butter layer

  • 250ml Canned Coconut Milk
  • 1/4 cup Peanut Butter (@macr0mike PB+)
  • 1 tbs Cornstarch
  • 1 tsp Vegan Gelatine (@queenfinefoods)

Berry jelly

  • 300ml Water
  • 1 tbs Berry Powder (@unicornsuperfoods Black goji)
  • 1 tbs Vegan Gelatine

Preparation

  1. Heat protein balls in the microwave until soft. Press into a lined tin. Put in the fridge to cool.

  2. Add ingredients for the peanut butter layer in a saucepan and mix until combined. Bring to low heat for a few minutes before bringing to a boil. Leave to simmer for a further minute while continuing to stir. Pour over base and put in fridge to set.

  3. Once the peanut butter layer is set, add ingredients for the berry jelly layer in a saucepan and mix until combined. Bring to low heat for a few minutes before bringing to a boil. Leave to simmer for a further minute while continuing to stir. Pour over the peanut butter layer and put in the fridge to set.

  4. Leave in the fridge to set for a couple of hours.
