Peanut Butter Breakfast Cookie Sandwich

Ingredients

  • 1 1/2 cup quick oats (haven’t tested any other oats)
  • 1 cup peanut butter (use any nut butter or sun butter if nut free)
  • 1/2 cup maple syrup or honey
  • 1 egg

Optional add-ins

  • nuts
  • chocolate chips
  • dried fruit

Preparation

  1. Preheat oven to 350°F

  2. In a bowl, whisk 1 egg

  3. Add in the oatmeal, peanut butter, and maple syrup

  4. Mix well with a spatula

  5. Fold in any add-ins you'd want such as nuts, chocolate chips, or dried fruit

  6. Take a cookie scoop and add to a greased baking sheet

  7. Take a fork then flatten the cookie

  8. Bake for 12-14 minutes, let cool, then eat

Assembly

  1. Spread yogurt between two cookies to make a sandwich
