Peanut Butter Breakfast Cookie Sandwich
Ingredients
- 1 1/2 cup quick oats (haven’t tested any other oats)
- 1 cup peanut butter (use any nut butter or sun butter if nut free)
- 1/2 cup maple syrup or honey
- 1 egg
Optional add-ins
- nuts
- chocolate chips
- dried fruit
Preparation
Preheat oven to 350°F
In a bowl, whisk 1 egg
Add in the oatmeal, peanut butter, and maple syrup
Mix well with a spatula
Fold in any add-ins you'd want such as nuts, chocolate chips, or dried fruit
Take a cookie scoop and add to a greased baking sheet
Take a fork then flatten the cookie
Bake for 12-14 minutes, let cool, then eat
Assembly
Spread yogurt between two cookies to make a sandwich
