Vegan Peanut Butter Oat Bars

Ingredients

  • 1/2 cup agave syrup
  • 2 cups peanut butter
  • 3 cups oats
  • 1 cup chocolate chips

Preparation

  1. Place the oats into the bowl of your food processor and grind them for a few seconds (shouldn't be too finely grinded).

  2. Add all ingredients, except the chocolate chips in a large bowl. Stir with a large spoon until blended.

  3. Transfer the mixture to an ungreased 8 x 8 dish lined with parchment paper. Spread well and press evenly with a spatula. Place in the refrigerator for 15-20 minutes to set.

  4. Microwave chocolate chips with a little water for approximately 2 minutes on high, or until melted. Stir well to combine.

  5. Spread chocolate mixture evenly over the peanut butter & oats mixture. Refrigerate for at least one hour before slicing. Store covered in refrigerator.
