Pumpkin Oatmeal with Spooky Oreo and Pretzel Toppings

Ingredients

  • 1 small pumpkin
  • Sweetener
  • Cinnamon
  • 50g oats
  • 30g salted caramel soy isolate protein powder
  • 100g pumpkin puree
  • 1 tsp chia seeds
  • 180ml almond milk
  • Oreo cookies
  • Pretzels
  • Googly eyes

Preparation

  1. Wash the small pumpkin and cut off the top to create a lid. Scoop out the seeds and flesh from the inside.

  2. Sprinkle sweetener and cinnamon inside the pumpkin to add flavor. Place the lid back on the pumpkin.

  3. Preheat the oven to 180°C (350°F).

  4. Bake the pumpkin in the preheated oven for 30 minutes, until it's slightly softened and the inside is caramelized.

  5. While the pumpkin is baking, prepare the oatmeal. In a saucepan, combine the oats, salted caramel protein powder, pumpkin puree, chia seeds, almond milk, and a generous amount of cinnamon.

  6. Cook the oatmeal mixture on the stove over medium heat, stirring occasionally, until it thickens and reaches your desired consistency.

  7. Once the pumpkin is done baking, carefully remove it from the oven and let it cool slightly.

  8. Fill the baked pumpkin with the cooked oatmeal mixture.

  9. Decorate the pumpkin oatmeal with spooky toppings. Break apart Oreo cookies to create "dirt" and arrange them around the oatmeal. Use pretzels to create "twigs," and place googly eyes on top for a spooky effect.

  10. Serve the pumpkin oatmeal with its decorative toppings for a delicious and festive breakfast.
