Pumpkin Spice Granola

Ingredients

  • 1 1/2 cup rolled oats
  • 1/4 cup sunflower seeds
  • 1 cup shredded coconut
  • 1/4 cup almond butter
  • 1/4 cup maple syrup
  • 1/4 cup pumpkin puree
  • 2 tbsp coconut sugar
  • 1/2 tsp cinnamon
  • 1/2 tsp pumpkin spice blend
  • 1/4 tsp salt
  • 1/2 cup walnuts pieces or pumpkin seeds or both

Preparation

  1. Blend 1/2 cup oats and sunflower seeds into fine pieces

  2. Transfer to a large bowl and add the shredded coconut, almond butter, maple, pumpkin puree, salt and spices

  3. Mix well until very well combined

  4. Combine with the walnuts or pumpkin seeds

  5. Bake at 350F in a baking tray with parchment paper. No oil need

  6. Bake for 10 min, keeping an eye on it at 8min

  7. Turn off the oven and let it cool with the oven door open for few minutes

  8. Remove from the oven and let it cool completely

  9. Store in an airtight container at room temperature
