Raspberry & Coconut Baked Oats

Ingredients

  • 40g oats
  • Large handful raspberries
  • 1 tsp vanilla extract
  • 2 tbsp coconut yoghurt
  • 130ml hot water from kettle
  • 1 large chunk of 85% dark chocolate, broken into pieces
  • Flaked almonds (for sprinkling)

Preparation

  1. Preheat the oven to 180 degrees C fan.

  2. In a mixing bowl, combine the oats, raspberries, vanilla extract, coconut yoghurt, and hot water. Stir well.

  3. Break the dark chocolate into small pieces and add them to the oat mixture. Gently press the chocolate into the oats.

  4. Sprinkle flaked almonds over the top of the mixture.

  5. Transfer the mixture to an oven-safe dish or baking tray.

  6. Bake in the preheated oven for 30 minutes or until the oats are golden and crispy.

  7. Remove from the oven and let it cool slightly before serving.
