Spelt and Teff Flour Crepes

Ingredients

  • 6 cups water
  • 2 cups spelt flour
  • 1 cup teff flour
  • 1 1/2 teaspoons sea salt
  • 3 tablespoons avocado oil

Preparation

  1. Whisk the batter until smooth.

  2. Preheat your pan to medium heat.

  3. Brush some oil on the pan.

  4. Pour in a scoop of the batter and smooth it with the back of the scoop to form a flat pancake.

  5. Cook each side for 1-2 minutes until done.

  6. Stack the crepes and cover with a cotton cloth to prevent drying.

  7. Enjoy! This recipe makes about 15 crepes; adjust measurements as needed.

  8. Fillings can include mashed avocado, cucumbers, and lettuce, or hummus, and it works well with sweet fillings too.
