Spelt and Teff Flour Crepes
Ingredients
- 6 cups water
- 2 cups spelt flour
- 1 cup teff flour
- 1 1/2 teaspoons sea salt
- 3 tablespoons avocado oil
Preparation
Whisk the batter until smooth.
Preheat your pan to medium heat.
Brush some oil on the pan.
Pour in a scoop of the batter and smooth it with the back of the scoop to form a flat pancake.
Cook each side for 1-2 minutes until done.
Stack the crepes and cover with a cotton cloth to prevent drying.
Enjoy! This recipe makes about 15 crepes; adjust measurements as needed.
Fillings can include mashed avocado, cucumbers, and lettuce, or hummus, and it works well with sweet fillings too.
