Spinach and Pastrami Pancake Parcels
Ingredients
- Pancake/Crêpe batter (1)
- Spinach
- 3 portions of light Dairylea cheese spread
- A few slices of Squeaky Bean NYC deli pastrami style
- Morrisons golden yolker
- Sainsbury's grated mozzarella cheese
- Peashoot salad
- Sea salt
- Chives
- Chilli flakes
Preparation
Make the pancake/crepe batter according to the recipe in the highlights.
Cook the spinach and set it aside.
Take 3 portions of light Dairylea cheese spread and layer them on the pancake/crepe.
Add a few slices of Squeaky Bean NYC deli pastrami style on top of the cheese spread.
Add the cooked spinach on top of the pastrami.
Fold the pancake/crepe into a parcel and pin it with cocktail sticks.
Part-fry a Morrisons golden yolker and place it on top of the parcel.
Sprinkle 20g of Sainsbury's grated mozzarella cheese on top of the egg.
Bake the parcel on high for 5-6 minutes.
Make a peashoot salad and season it with sea salt, chives, and chilli flakes.
