Spinach and Pastrami Pancake Parcels

Ingredients

  • Pancake/Crêpe batter (1)
  • Spinach
  • 3 portions of light Dairylea cheese spread
  • A few slices of Squeaky Bean NYC deli pastrami style
  • Morrisons golden yolker
  • Sainsbury's grated mozzarella cheese
  • Peashoot salad
  • Sea salt
  • Chives
  • Chilli flakes

Preparation

  1. Make the pancake/crepe batter according to the recipe in the highlights.

  2. Cook the spinach and set it aside.

  3. Take 3 portions of light Dairylea cheese spread and layer them on the pancake/crepe.

  4. Add a few slices of Squeaky Bean NYC deli pastrami style on top of the cheese spread.

  5. Add the cooked spinach on top of the pastrami.

  6. Fold the pancake/crepe into a parcel and pin it with cocktail sticks.

  7. Part-fry a Morrisons golden yolker and place it on top of the parcel.

  8. Sprinkle 20g of Sainsbury's grated mozzarella cheese on top of the egg.

  9. Bake the parcel on high for 5-6 minutes.

  10. Make a peashoot salad and season it with sea salt, chives, and chilli flakes.
