Superfood Oatmeal Bake
Ingredients
- 2 cups oats
- 1 tblsp cacao powder 1 tblsp chia powder 1 tblsp hemp seeds 1 tsp baking powder
- 1 tsp cinnamon Pinch of salt
- 1/3 cup coconut sugar
- Liquid Ingredients
- 2 cups nondairy milk(I used lite coconut but rice milk would be good too)
- 2 eggs
- 1/2 tbsp vanilla extract
- 3 tbsps maple syrup
- 11/2 tblsp melted coconut oil
- 2 cups frozen mixed berries
- 2 tblsp goji berries 2 tblsp mulberries 1 tsp Acai powder 1/4 cup pepitas and sunflower seeds or favorite nut
Preparation
Heat oven to 375
Mix berries, dried berries, and Acai together in a bowl
Spread half of berries in baking dish greased with coconut oil
Then cover with all of mixed dry ingredients
Whisk wet ingredients and pour over oatmeal
Top with rest of berries
Bake for 20 min or until the oats have absorbed all the liquid
If you want it sweeter, you can serve it with a little maple syrup when it's done
