Tropical Tapioca Parfait

Ingredients

  • coconut tapioca parfait: 1 cup coconut milk;
  • 1/2 cup water;
  • 4 tbsp tapioca pearls;
  • 2 tbsp chia seeds;
  • 1-2 tsp maple syrup (optional);

Preparation

  1. Soak the Tapioca and chia seeds with coconut milk for 20min or so; Then transfer the soaked tapioca in a small saucepan and add the remaining ingredients. Cook for a couple minutes until it starts to get sticky. Add a little more liquid if necessary, depending on the desired consistency. For the sauce, just blend it until smooth. Pour some of the tapioca into 2 jars, following with some of the sauce. Repeat with more tapioca and finish with the sauce

  2. Leave in the refrigerator until cool down or eat it hot
