Vegan Avocado Toast with Bacon and Veggies
Ingredients
- a little oil
- some plant-based bacon
- 2 large handfuls of spinach
- vine tomatoes
- sourdough bread
- avocado
- salt
- pepper
- garlic granules
Preparation
Add a little oil to a pan, then add plant-based bacon and cook according to package instructions.
In the same pan, add spinach and vine tomatoes, and stir until the spinach wilts and tomatoes fry lightly on each side.
Toast sourdough bread, then add avocado and mash it into the bread with a fork, seasoning with a little salt, pepper, and garlic granules.
Once the bacon is cooked and spinach is wilted, assemble all components on the sourdough with the mashed avocado.

This is a simple, healthier option that is extremely satisfying.
